Step 1

Peel and devein 1 ½ lbs. of shrimp if they haven't been already.

Step 2

Remove the zest from three limes with a vegetable peeler or zester. Add the zest and the juice from the three limes to a mixing bowl.

Step 3

Add the shrimp, three cloves of minced garlic and ¼ cup of extra virgin olive oil to the ball with the lime zest and juice.

Step 4

Mix the ingredients together in the bowl with your hands and then refrigerate for 30 minutes.

Step 5

Preheat your grill to around 350 degrees F, or medium heat setting.

Step 6

Remove the shrimp from the fridge and slide the shrimp onto metal skewers. Use several shrimp for each skewer. Set the shrimp on paper towels to absorb a little marinade to prevent burning.

Step 7

Place the shrimp onto your grill and let them grill for two to three minutes per side, or until they have turned pink and curled slightly.

Step 8

Remove the shrimp from the grill and serve with additional lime wedges.
